This is a recipe by Shabnam A – recreating KFC style fried Chicken in burgers for her family. I have been given permission to share this recipe and photograph by Shabnam A – it’s just been reformatted by me so I can share the recipe using the blog’s way of recipes.
4 chicken breast fillets;
For the marinade: 1/2 cup buttermilk and 1 egg (whisked)
4 tbsp plain flour;
2 tbsp cornflour;
1 tsp garlic salt;
salt and black pepper to taste;
1/2 tsp red chilli powder (adjust to taste);
2 eggs beaten; in a deep dish
Marinate the chicken in buttermilk and egg mixture for 4 hours in the refrigerator.
Combine all the dry ingredients in a paperbag. Dip the chicken pieces in the flour mixture bag and shake well.
Dip in the whisked egg mixture, and deep fry. You may want to double dip them in the flour if you think the coating is not thick enough for you.
Serve hot in a burger with some spicy masala chips (as shown in picture).
