1/2 bunch of mint, washed and stems removed
3-4 green chillies, roughly chopped
2 tomatoes, roughly chopped
2 red onions, roughly chopped
salt to taste
Combine everything in a blender and blitz together for 15-20 seconds. Scrape down the sides, and blitz again till it is a smooth sauce. Season to taste and let it stand for a few minutes, before serving. Keep refrigerated in an airtight container.
I like to add some garlic cloves in my chutney as well as some cumin and coriander powder, but this is a lovely basic mint chutney that can be adjusted to suit your own taste and flavours.
