Lemon Mint Diakon Salad

This could be a side salad condiment or a little snack on its own, but either way it is super enjoyable and crunchy.

Wash, peel and slice the White Diakon (mooli) into batons as shown above. Too thin, and they go soggy, too thick and they don’t grasp the dressing as well.

Sprinkle some Himalayan salt, black pepper, mango powder and chaat masala. Combine well and add a generous squeeze of lemon followed by some finely chopped fresh mint leaves.

Serve as a quick snack – something made regularly in our household as I’m advised that the bitterness from the diakon is good for diabetics and it is also good for liver cleansing. I am not a medical expert – so please check it is suitable for you before you make it. We enjoy it as a snack or as a crunchy side salad.
